no, i’m not completely impaired, what makes you say that?????? i inserted that photo into my last post 47 times, so here it is separately. sometimes, it’s better just to break up. aaannnddd, how is it exactly that i got a yellow background in that pictureless post?

    tart crust:
    place into cuisinart:
    2/3 package mother’s macaroon cookies
    1 cup pecans
    pulse until in crumbs. add 1/3 cup melted butter.

    press mixture (anna loves this part) into tart pan with removable bottom. you can buy these at williams sonoma,or home chef or a miriad of other places i’m sure.

    bake at 325 until light golden brown 10-15 mins approx.
    remove and let cool.

    filling:
    1 pint whipping cream
    1 block cream cheese
    1 teaspoon vanilla
    2/3 cup granulated sugar
    1 Tablespoon orange juice concentrate or 2 Tablespoons orange juice if you don’t have the concentrate but the concentrate adds more flavor.

    whip cream until thickened. set aside. blend cream cheese with sugar, vanilla and orange. fold cream into mixture and then spoon into cooled tart shell. top with fresh raspberries and then chill for at least 2 hours.

  2. Wow, this sounds yummy. Do you promise no calories as long as we cross our fingers and toes while eating this rich concoction? I bet it smells good.
