my neighbor fixed my grass where i kept running over it with my SUV, so i made him a fresh strawberry pie! my favorite strawberries are gone until next year but if anyone wants the recipe, lemme know!!! and i’ll exchange the recipe for driving lessons.

  2. you bake a single shell pie crust. i use my mother’s pie crust recipe because you don’t have to roll out the dough and it’s flaky flaky flaky. you can just press it into the pan. i go to whole foods (aka whole paycheck) and buy the expeller pressed shortening because i won’t cook with hydrogenated oils, but you can do whatever.

    place into mixing bowl of mixer:
    2 cups shortening
    4 cups flour
    1 teaspoon salt
    1 teaspoon baking powder

    blend until mixture is in pea-sized pieces.

    then pour into measuring cup:
    1 egg white
    juice of one lemon
    and enough COLD water to equal 3/4 cup total liquid.

    pour liquid mixture into mixer and blend until forms ball. this is supposed to make 4 single shell crusts or 2 whole pies. it doesn’t. i use too much crust. i grab a large piece and place it into the center of my pie pan and then press it out toward the edges. have it about 1/4″ thick. so the fruit doesn’t soak into the pie crust do the following. pour about 2 tablespoons milk into uncooked shell. tip the shell to coat the entire crust and then pour out the excess. grab a handful of granulated sugar and heavily sprinkle the sugar into the shell. it will stick to the wet milk. when the shell bakes, this makes a hard crust so that the juices from the fruit don’t make the crust soggy. bake at 375 until light golden brown. in my convection oven this happens in about 14 minutes. set aside.

    take two one pint baskets of fresh strawberries and wash and remove stems. place into 4 quart heavy saucepan. add 1 cup granulated sugar, 1/4 cup lemon juice and 1/4 cup cornstarch. mash with potato masher until fruit is in no bigger than about 1/2 inch pieces. bring to boil over medium heat. mixture will turn less opaque and thicken. boil for about one minute, stirring constantly. remove from heat and let cool until warm, but not boiling hot.

    okay.. now… you place whole, stemmed strawberries into the pie shell. then you pour your strawberry glaze mixture over the top and put into the refrigerator for at least a couple of hours. (this works smashingly with peaches also, but you only use 2 T. lemon juice and you add 1/2 teaspoon cinnamon to the glaze – otherwise, EXACTLY the same recipe!)
    after pie has “set”, then whip a pint of heavy whipping cream until you can form peaks, add 1 t. vanilla and 1/2 cup powdered sugar, mix and top with cream.
